Our pumpkin carving was so much fun this year.  We carved these really big pumpkins from our Grandma's garden.   We saved as many seeds as we could, so we can have giant pumpkins next year!  We can't wait to plant our seeds next summer!

Down by the river!

 Here is my little 2nd grader!  She is so cute!  Her sign reads "I am a 2nd grader!"
Here is my big 3rd grader!  Getting so big and handsome! His sign read "I am a 3rd grader!"

Isn't it surprising how Mindy is smiling?  If you want to know what I said to get her to smile you'll have to ask!    So today I am trying to be productive since no one is home to need my attention, or I am not reffing any fights today, well that is until they get home! ~Andi

4th of July!

For the 4th of July this year we went to the parade in Benson.  There was a few good floats and some really weird ones, and then the normal ton of jeeps that go through, oh and don't forget the fire trucks!  Anyways we watched the parade and then stayed home the rest of the day and grilled outside.  No fireworks for us since it was so dry.  We had a nice relaxing day!

Choclate Drizzled Strawberries and Cream Pie

This recipe is from Our Best Bites. They have so many good recipes, you really should go check them out, I haven't tried a recipe of theirs that I haven't liked!  So on to the recipe.  Oh and by the way don't make the strawberry cream pie recipe that I had posted earlier in the year, it doesn't even compare to this one.

Chocolate-Drizzled Strawberries and Cream Pie

Recipe by Our Best Bites1 quart fresh strawberries (frozen’s not gonna cut it here. If you use them and then leave a comment telling us how gross this recipe is, we’ll cut you. Just kidding. But seriously peeps, don’t use frozen strawberries.)

1 8-oz. package cream cheese at room temperature (light is fine)

1/2 tsp. vanilla extract

1/4 c. packed light brown sugar

1 c. heavy whipping cream

1/4 c. powdered sugar

1 9″ graham cracker crust (store-bought or homemade)

1-2 ounces chocolate

In a medium bowl, beat the softened cream cheese, brown sugar, and vanilla until light and fluffy. In a separate large bowl, beat the whipping cream and powdered sugar until medium peaks form. Add about 1 c. of the whipping cream mixture to the cream cheese mixture. Beat until smooth and well-combined. Add the remaining whipping cream mixture and mix until just combined. Spread in the graham cracker crust and refrigerate for a few minutes while you prepare the strawberries.

Wash the strawberries and cut off the stems. Blot dry with a paper towel and then gently press, cut side down, into the whipped cream mixture. Set aside.

If using a chocolate bar, break it into equal pieces and place in a small Ziploc bag. Microwave for 1-1 1/2 minutes, stopping the microwave every 20 seconds to mash the bag. You want the chocolate to be melted but not hot at all. When the chocolate is melted, snip a corner off the bag and drizzle it over the strawberries. Refrigerate for at least three hours before serving. Serves 8.

Tubing the Gila

We went to Safford to the Gila river to go tubing last Sunday.  We could have chosen a better day to go tubing.  Sunday was a terribly cold and windy day for the first of May.  So Waylon and I chickened out on getting in the water, so Jessi and Zach got in the water with our kids and tubed in the river.  Now we need to plan a trip for a very hot day!
Rylee up to bat!  He is having lots of fun this baseball season.  It is amazing how each year the kids really understand things that much better!  At one of his games he got to pitch, he was so excited but also very nervous!  He did really good.  He did strike one kid out, sad thing is that it was one of his friends, I think he felt a little bad about it, but they are all good sports!

New Animals

 The two pictures above are of our neighbors horse and a new calf that our neighbor is having to bottle feed 'cause the mama was killed.  After he fed the calf one day I got this pic of it running over to the fence to stand by the horse.  I thought it was too cute.
 This is red man, our newest addition, soon he will be in our freezer!!  Yummy!!  Can't ya just see the steaks and roasts right there?
 This is Red Mans mama, and her newest baby.  In the above picture she was trying to get her calf to stand up and he wasn't moving quick enough for her so she nudged him with her hoof first, then her nose.  I happened to be trying to get a pic of him standing for the first time, and right when she nudged him with her nose he started to stand and then went flying through the air.  He is only about 5 or 6 minutes old in these pics.
I love seeing baby animals!

Recipe for Brownie Pizza

For the Brownie Pizzas I made around Valentine's Day I just used a milk choclate Brownie mix from the grocery store.  Then I cut my brownies in heart shapes.
8 oz. pkg. Cream cheese
1/2 C. powdered sugar
1/2 tsp. clear vanilla extract

Blend all ingredients well.

Cut your strawberries into heart shapes.  Use lotsw of strawberries.

Now assemble your heart shaped brownies by smoothing on some of that yummy frosting, and piling hi with strawberries.

Snow in AZ

It snowed here Febuary 27th.  My camera was almost out of batteries, so by the time that I had let my battery take a rest, Rylee's hands were freezing so he didn't want to get his picture taken.

Valentine's Brownie Pizza's

They were really good.  If anyone wants the recipe let me know and I will post it.  I thought they turned out really cute. ~Andi

The Boy's 8th Birthday!!!

Our first born is already 8 years old!  That is crazy.  On Wednesday night we made brownies with sprinkles on top to take to school on Thursday morning.  Then Thursday night Rylee got to choose what was for dinner.  He chose homemade pizza.  Rylee and Mindy helped to make the pizza that evening it was delicious.  Then we had homemade ice cream sandwiches ( pictured below) they were scrumptious, our new favorite thing.  Thanks to Alice for giving me the recipe! They literally only took about 5 or 6 minutes to make.
 Then we had a party on Saturday for Rylee with all of his friends.  So Friday afternoon I was making a cake and cupcakes, and I asked if the kids wanted to help me.  Of course they did.  So after I was done mixing the cupcakes I put the mixer by the sink so if the beaters dripped they would drip in the sink.  Rylee trying to be helpful was trying to pull them out so he could wash them.  I said no they don't pull out.  Just leave it and I will help you in a minute.  Well I turned my back for one second and he decided to turn the hand mixer on! Ugh. What a mess.  See for yourself...

 That picture does not do the mess justice.  It was all over.  It was on the wall, the counter, the floor, Rylee, and anything else in its chocolaty path.

Rylee still loves football so we had a football party.  I love how our cake turned out.
Here is our cupcakes, I used that same recipe for the frosting and everyone loved it!!  I don't recommend using the cheap liquid food coloring, it makes it look weird, so I would only use the Wilton stuff out of the little containers.   All in all Rylee's Birthday was a huge success.  I also made the banner in the picture behind Rylee.  Now we have it for all birthday's.  ~Andi
